I must admit, it has been quite some time since I’ve baked cupcakes. I have been baking a little here and there. My sister and I made this chocolate chip cookie cake we found on Pinterest and it is to die for. I will definitely be making it again!
My coworker’s birthday was over the weekend and I took it as an excuse to bake so that he could be surprised with some delicious treats come Monday (today). I have been wanting to bake these so I thought I may as well do it now!
- I took my favorite chocolate recipe for the base.
- I also topped them off with this ganache recipe which I’ve used in the past. It uses ingredients you can find in your kitchen if you don’t usually stay stocked on heavy cream! For the ganache, I was a bit more generous on the butter and I added about a tablespoon of white sugar.
- The cream filling was simple. I whipped up about 3 tablespoons of butter and a pinch of salt. I added about 3/4 cups powdered sugar and 2-3 tablespoons milk then whipped the crap out of it! 🙂
- Finally for the frosting swirl, I filled a bowl full of powdered sugar and then added a few splashes of milk. I had to keep adding milk/sugar to reach my desired consistency which is very thick. On my test cupcake, the regular “frosting” thickness was too thin and it sunk into the ganache.
And voila! Beautiful, and fantastic tasting cupcakes!
