Note to self: do not stray from trusted cupcake recipe!
I don’t know why I decided to try a new recipe instead of playing around with my trusty base cupcake recipe, but I did, and it was a sad failure (in my opinion). Unfortunately, the cake itself came out very dense and somewhat bland and flavorless. Sad panda! 🙁
So while I won’t be sharing a recipe with you in this post, I will share some of the processes I used, because I’m certain that if the cake base were correct, these cupcakes would have been fantastic!
- Finely chop a fresh peach into pea-sized pieces. Use about 2/3 of a chopped peach in the batter.
- After filling batter into cupcake liners, sprinkle on some cinnamon brown sugar mixture and swirl it around with a toothpick.
- Add the other 1/3 of the chopped peach pieces into vanilla frosting. A juicy peach may eliminate the need for any milk or other thinning ingredient.
- Mix together cinnamon, brown sugar, oats, and butter to create a delicious crumble to top off the cupcakes.
