Clean Chocolate Chip Cookies with Dates

Several months ago, I discovered this incredible recipe for date-sweetened chocolate chip cookies via Pinterest. I love browsing Pinterest and saving recipes and still have probably over 100 recipes saved that I still need to try. But my favorite recipes always get a blog post here because I want to share my stamp of approval, and also for easy reference for myself.

If you make these cookies just right, the texture comes very close to a classic chocolate chip cookie but without the guilt. These cookies do not contain any butter (or added oils), processed sugar, or flour– how great is that?! Plus, I’ve had many friends and a few of their kids taste-test and they all approve.

With fall quickly making its way into our neighborhood, I have been getting the cozy, domestic feeling inside that inspires me to bake my butt off. And what screams ‘fall’ more than pumpkin? I decided to look up a pumpkin cookies recipe and chose this one from Very Best Baking due to the great ratings.

While the I was making these cookies, I had a yummy stew cooking in the crock pot and plans to use the rest of the canned pumpkin for dog cookies. Treats all around!

Chewy, Delicious Gingersnap Cookies

My dad occasionally reminds me how much he loves gingersnaps. It’s one tidbit I’ve stored up in my mental vault and I’ve made him a batch here and there. Well, since Father’s Day was coming up, I knew I wanted to make him some of these special cookies. 

I used a recipe found on Allrecipes, however instead of shortening, I decided to use refined coconut oil instead (it doesn’t taste like coconut at all). The result was the most perfect, chewy, delicious cookies! And because the recipe made so many cookies, I decided to split up the batch and bring cookies to my father-in-law, brother-in-law, and sister-in-law’s father who would all be at a family BBQ together. (I made sure to give my dad the most cookies, of course!)

“Samoa” Girl Scout Dog Cookies

When we were notified about the Girl Scout cookie recipe contest for 2016, they also let us know about a second contest they were hosting. This recipe contest was to come up with dog treats inspired by Girl Scout cookies. The first idea to enter my mind was to figure out a way to make cookies that look like Samoas but with dog-friendly ingredients.

Christmas Baking: Gingerbread Cookies

Just wanted to share my beautiful creations for this Christmas season. Since we’re still recovering (financially) from our incredible wedding, I decided to do mostly handmade gifts this year, which included a lot of baked goods. 🙂

I made a great variety of sweet treats, including gingerbread cookies using the same recipe I used last year. They turned out perfectly delicious once again.

Flourless Chocolate Brownie Cookies

I’m SO excited to share this recipe because it’s:

  • flourless, which means gluten-free,
  • very quick and easy to make,
  • low calorie, and
  • ridiculously yummy!

I tested this recipe back in the summer when I wanted to find some type of brownie-cookie to bring to my friend’s housewarming party. I wasn’t quite sure this was what I was looking for until I tasted one out of the oven. Oh. Em. Gee. They are so delicious. And the best part? Low calorie (about 60-80 calories per cookie, depending how big you make them)!!!

Not knowing what cookies to make for The Great Food Blogger Cookie Swap this year, my husband suggested I make these (because he loved them so much too) so I decided to toss crushed candy canes on top for a nice holiday twist.

Pumpkin Snickerdoodles

With fall in full force and an approaching weekend cabin trip with friends, I decided it was time to bake and that should include pumpkin. Originally I was going to make a pumpkin pie from scratch, but the little pumpkin looks so cute on my table so I want to save it for decor for just a little longer.

So instead I used some packaged pumpkin puree I had sitting on the shelf and decided on pumpkin snickerdoodles. I borrowed the recipe from Mom on Timeout but made a few changes.

That day turned out to be very pumpkin-filled, as I also made myself a pumpkin spice Americano and a pumpkin spice chai. Gotta love fall!

Healthy Cookie Dough Balls

Since I would be hosting my girlfriends to watch The Bachelor (guilty pleasure) I needed to come up with snack ideas. It’s been an unhealthy start to the year, so I thought I’d try something a little different, and came across this healthy no-bake cookie recipe.

I was a little uncertain about using cashews because I’ve never used them for something like this before. And my past experience with unusual ingredients (black beans in brownies) did not go so well. But I forged ahead anyway and purchased some raw cashews.
