Toward the end of last week, I got a “craving” to bake a pie. It had been a while since my last pie, and there’s just something so rewarding about rolling out homemade pie crust.

At first, I was going to bake a classic sweet pie when it hit me that I should try to create a savory, healthy pie. I used no recipe for the filling, but threw together my own ingredients with hopes that it wouldn’t be too runny or strange tasting. To my delight, it came out exactly perfectly. And it was SOOO good!

The pie crust recipe I used was very buttery and fatty and if I were to do this recipe again, I would look for a lower-fat recipe. For that reason, I’ve omitted the crust recipe from this post.

Baked Samoa Coconut Chocolate Shrimp

I can’t remember how this brilliant idea came to me, but when I put two and two together (coconut shrimp + there are coconut shreds in Samoa cookies) I knew it would be perfect! This recipe is for the 2013 Girl Scout cookie recipe contest!

This sweet and salty snack makes a great appetizer and is a slight twist on the classic coconut shrimp. You get a little extra sweetness with the caramel and a hint of chocolate in the flavor.

I started out with just a sample size of 7 shrimp, but it’s plenty for two people! This recipe can certainly be doubled or tripled as desired.

Homemade Ritz Crackers

Lately I have been stumbling across recipes throughout the internet that I want to try and this recipe from Cupcake Project for homemade Ritz crackers was on the list. I finally had some time tonight so I tried them!

They were actually very quick. I only did 1/4 recipe because I don’t have a food processor, but I do have a Magic Bullet. 🙂 I probably could have fit 1/2 recipe in there, but I wanted to be sure. It took about 10 minutes to make the dough and then I rolled it out and cut circles.

I was nervous about how they would come out, but lo and behold, they are perfect! Thanks for such an easy and yummy recipe, Cupcake Project!
