I recently tried out a local produce delivery service (which was pretty fantastic, but to be honest they gave me way more than I could handle!) and my box came with a few zucchinis. So of course I had to think of some way to add sugar to them and bake a delicious treat. Zucchini bread has been done, so I found this zucchini brownies recipe instead. 

The reviews claimed that these brownies are fudgy and delicious. However, because I made a few alterations, mine came out more like a very moist cake (still delicious though!). Clean Chocolate Chip Cookies with Dates

Several months ago, I discovered this incredible recipe for date-sweetened chocolate chip cookies via Pinterest. I love browsing Pinterest and saving recipes and still have probably over 100 recipes saved that I still need to try. But my favorite recipes always get a blog post here because I want to share my stamp of approval, and also for easy reference for myself.

If you make these cookies just right, the texture comes very close to a classic chocolate chip cookie but without the guilt. These cookies do not contain any butter (or added oils), processed sugar, or flour– how great is that?! Plus, I’ve had many friends and a few of their kids taste-test and they all approve.

Flourless Chocolate Brownie Cookies

I’m SO excited to share this recipe because it’s:

  • flourless, which means gluten-free,
  • very quick and easy to make,
  • low calorie, and
  • ridiculously yummy!

I tested this recipe back in the summer when I wanted to find some type of brownie-cookie to bring to my friend’s housewarming party. I wasn’t quite sure this was what I was looking for until I tasted one out of the oven. Oh. Em. Gee. They are so delicious. And the best part? Low calorie (about 60-80 calories per cookie, depending how big you make them)!!!

Not knowing what cookies to make for The Great Food Blogger Cookie Swap this year, my husband suggested I make these (because he loved them so much too) so I decided to toss crushed candy canes on top for a nice holiday twist.

Chocolate Protein Hazelnut (Nutella) Spread

A few days ago, I [somewhat] impulsively bought some hazelnuts because I love the flavor and wanted to experiment with them. I looked around online for recipes but ended up wanting to try homemade Nutella, but with a catch– I’d use protein powder instead of chocolate chips.

It was very quick and easy to make (though skinning the hazelnuts was a slight hassle) and the flavor turned out great! The consistency is obviously a little thicker and not as smooth as Nutella due to the protein powder. Enjoy!

Wow, it’s been a while since I’ve baked cupcakes! But it felt so good and put me in such a good mood last night! 🙂 It’s my amazing coworker Michelle’s last day at work today and we are going to miss her dearly, so I thought I’d send her off with one last taste of my baked goods. Cure-Your-Appetite No-Bake Cookies

After altering the traditional “no-bake cookie” recipe several times, I have finally settled on one that I really like! I’ve gone through cookies that are way too sweet, not enough protein, enough protein but too dry, and now these. They are probably slightly not sweet enough, but the purpose of these cookies is to give you a little boost of protein and keep you full with healthy fat.

What I love about coconut oil is that completely curbs my appetite. And what better way to curb it than with cookies?!

Several months ago, a friend asked if I might consider baking cupcakes for her wedding. This is something I have never done before (mass quantities) so I was very hesitant and told her I needed to think about it a bit.

After returning to her with a ‘yes’, I began calculating required quantities of ingredients and costs (and was pretty spot-on with pricing, by the way!). The only part I was unsure of was how long this would take. I gave myself an entire Saturday, the day before her wedding, for baking. Due to deposits and insurance and fees, I opted not to rent a kitchen and bake at the bride’s mother’s house instead because she has two ovens. I really would have liked to have two mixers!

Gluten-free Chocolate Wedding Cupcakes

My step sister does not eat gluten and asked if I could make a small batch of gluten-free cupcakes for her wedding (there would be gluten-filled cupcakes for the rest of the guests) and of course I agreed!
