Lemon Basil Cupcakes

lemon basil cupcakes

These cupcakes were inspired by a recent episode of Cupcake Wars. 🙂 My friend Kyra who owns Crave Bakeshop was on her fourth episode and created beautiful lemon basil cupcakes. I borrowed her idea and ran with it, altering it a bit. I knew that these cakes would be plenty sweet and flavorful and would not need frosting which is why I opted for a glaze instead. They were a hit!

Sesame Street Cupcakes

I had the pleasure of baking cupcakes for Chris’s nephew’s 2nd birthday this weekend. I honestly had been looking forward to making them all week and yesterday morning I finally got to it. I started on them as soon as I woke up around 9 and it’s a good thing because I didn’t finish until about 1:15! (I could never be on Cupcake Wars with all of their time limits; I’d be a complete failure.)

In theory, these cupcakes are very simple. Bake cupcakes. Make frosting. Color frosting red, yellow, and blue. Frost the cupcakes as desired (I decided to use different tips and cover the red ones in sprinkles). Stick on eyes, cookie mouths, or beaks.

What was time consuming:

  • Making all of the eyes (I made over 40 little eyeballs) took a while...

Amazing Chai Cupcakes

[Imaginary picture goes here. I forgot to take a photo 🙁 ]
The other day, my boyfriend invited me to a dinner party for one of his friends who was in town for a few short days. I had been talking up my cupcakes to a few of the people who were going to be there, so I thought this would be the perfect opportunity to prove my skills.

Only problem was, this was a last-minute party to which I was invited day-of and it happened to be a work day. Could I run home on my lunch break and whip up a batch of cupcakes without being gone too long from work? I was willing to accept my challenge.

I was gone for exactly an hour including about 25 minutes of total drive time which means I pumped out a batch of cupcakes AND frosting in record time. I felt like I was on Cupcake Wars.
Not wanting to settle...

Strawberry Cupcakes

I’m not a great photographer, but the frosting is actually naturally quite pink from the strawberries, and very pretty!

I found this Strawberry Cupcake recipe just before I got sick, and before we went out of town, so I hadn’t gotten a chance to bake them yet. The recipe is by Candace Nelson of Sprinkles Cupcakes, so I knew it would be good!

I originally found the recipe on Martha Stewart’s website, but the listed ingredients are wrong, and there was a comment that pointed me to this video on YouTube of Candace demonstrating the recipe on some talk show.

Chai Cupcakes: Spicy and Divine

I was in the mood to bake this weekend since it had been over a week (far too long, lol!) since I had last baked anything. I was in the mood for cupcakes, especially because I wanted to take another shot at frosting and Jon suggested chai cupcakes after having watched the season premier of Cupcake Wars (featuring my friend Kyra as a contestant)!

I looked up a recipe that sounded good and took Jon to the store to pick up some ground cardamom which was the only ingredient we were missing.

I began mixing the spices together to make the chai spice, but realized that it was a little lacking after some internet research. So I added a pinch or two of nutmeg and an extra 1/8 tsp ginger and an extra 1/8 tsp cardamom...
