When we were notified about the Girl Scout cookie recipe contest for 2016, they also let us know about a second contest they were hosting. This recipe contest was to come up with dog treats inspired by Girl Scout cookies. The first idea to enter my mind was to figure out a way to make cookies that look like Samoas but with dog-friendly ingredients.

Another recipe idea I came up with for the Girl Scout cookie recipe contest was a sweet treat that’s easy to munch on. It’s that time of the year again! I’ve got five boxes of Girl Scout cookies and I have to come up with a recipe that will wow the judges for this year’s Girl Scout cookie recipe contest. Rather than coming up with an intricate, fatty (albeit delicious) recipe, I decided to put a few of my favorite [healthy] ingredients together to create a delicious and easy treat that is nearly guilt-free!

This recipe uses only four ingredients and is full of Omega-3’s, fiber, and vitamin C. It’s a great way to satisfy your sweet tooth without adding to your waistline!

Thin Mint Frozen Grasshopper Pie

When fishing for ideas for my Girl Scout cookies, someone suggested making grasshopper pie. What a great way to incorporate Thin Mint cookies, and super easy. I had to do it!

I created the crust recipe on my own and decided to add instant pudding for the middle. Unfortunately, and I’m not sure if it’s because I used almond milk, the pudding is quite runny when chilled or at room temperature, so I stuck it in the freezer. It turns out, I’ve created an ice cream sandwich-esque minty treat!

Baked Samoa Coconut Chocolate Shrimp

I can’t remember how this brilliant idea came to me, but when I put two and two together (coconut shrimp + there are coconut shreds in Samoa cookies) I knew it would be perfect! This recipe is for the 2013 Girl Scout cookie recipe contest!

This sweet and salty snack makes a great appetizer and is a slight twist on the classic coconut shrimp. You get a little extra sweetness with the caramel and a hint of chocolate in the flavor.

I started out with just a sample size of 7 shrimp, but it’s plenty for two people! This recipe can certainly be doubled or tripled as desired.

At this very moment, there are five whole boxes of Girl Scout cookies in my car. Why am I not eating them NOW, you ask? Because I’m participating in the 2nd annual Girl Scout Recipe Contest!
