When fishing for ideas for my Girl Scout cookies, someone suggested making grasshopper pie. What a great way to incorporate Thin Mint cookies, and super easy. I had to do it!
I created the crust recipe on my own and decided to add instant pudding for the middle. Unfortunately, and I’m not sure if it’s because I used almond milk, the pudding is quite runny when chilled or at room temperature, so I stuck it in the freezer. It turns out, I’ve created an ice cream sandwich-esque minty treat!
Thin Mint Grasshopper Pie
This weekend, I took on an old recipe that I had created last year and tweaked it a bit to make it even better. These minty snacks are a play on the classic Chex® Muddy Buddies but with a minty flare. This recipe is a potential entry into the Girl Scout cookie recipe contest.

A few weeks ago, I got this awesome opportunity to participate in a contest with Girl Scout cookies! I finally picked up my [free] cookies on Monday and began baking last night. I only get to submit one recipe so my plan is to come up with a bunch of different concoctions and submit my favorite into the contest.
Last night I kept it simple and made Thin Mints brownies.

This is a spin off of the Cooking Light recipe for mint cookies. I got these Nestle mint chips at the grocery store as an impulse buy and decided to incorporate them into cookies!

This recipe was adapted from one found on the internet, with a few alterations made. I am proud to say that they were delicious! The cake was practically perfect.
